Often, those of us who follow the Lacto-Vegetarian diet have difficulty finding eggless vegetarian lasagne recipe dishes. This is because most restaurants use egg in their recipes. In addtion, many ready made vegetarian lasagne meals also contain egg (the lasagne sheets are made using egg).
The irony is that lasagne does not need to have any egg based products. I have used this eggless vegetarian lasagne recipe for years and feel confident that viewers to this blog will also find it helpful.
This eggless vegetarian lasagne recipe has two layers of filling – a tomato sauce filling and a spinach filling.
1 pack (200g) Lasagne sheets (made from durum wheat)
50g Vegetarian cheddar cheese
Tomato sauce – prepare the sauce as per my earlier blog entry
Roasted vegetables – chop and bake as per earlier blog entry (optional)
Cheese sauce – prepare the sauce (with or without leeks)
½ tbsp Olive Oil
50g Small Onion (chopped)
200g Baby spinach
200g Vegetarian soft cheese
½ tsp Black pepper
1 tsp Salt
Oven temp: 18oC (350oF / Gas Mark 4) Cooking / Baking time: 2½ hours Serves: 4
For the tomato filling – prepare the vegetarian tomato sauce
Add the roasted vegetables. Mix the two together. Keep aside.
For the spinach filling – blanch the spinach for a few minutes in boiling water. Drain and blend to a paste like consistency. In a pan, add the olive oil and sauté the chopped onions. In a bowl mix together the spinach paste, vegetarian soft cheese, onions and seasoning, keep aside.
Make the cheese sauce.
To prepare the vegetarian lasagne sheets, follow the instructions as per the packet. I personally prefer to pre-cook the lasagne sheets (by placing the sheets in a deep large pot of boiling water and cooking it until it softens a bit).
Grease a deep oven proof dish. Cover the base with the pre-cooked vegetarian lasagne sheets. Pour the spinach filling on top and spread evenly. Cover with another layer of vegetarian lasagne sheets. Spread the tomato and mixed vegetable sauce and cover with another layer of vegetarian lasagne sheets.
With the breadcrumbs, cover the edges of your ovenproof dish and sprinkle the vegetarian cheddar cheese on top. Place in oven and bake for 20 – 25 minutes or until golden brown.
