Home-made vegetarian tomato pasta sauce

Making your own vegetarian tomato pasta sauce is satisfying, especially if you are concerned about the added ingredients in commercial sauces on the market.

To make basic vegetarian tomato pasta sauce doesn’t require a lot of ingredients, you just need the time to make it.  Here’s a recipe that still works for me. If you wish, you can add more herbs to the sauce for added flavour.

1kg Tomatoes
1 medium (approx 154g) Onion (chopped)
7 cloves (approx 26g) Garlic (chopped)
1 Green Chilli
½ tsp Black pepper
Bunch of fresh dill, roughly chopped
1 tsp Salt
1½ tbsp Olive oil

Cooking time: 50 minutes (Approx)

Blanch the tomatoes (either by boiling or steaming for 10 – 15 minutes), remove the skin and place the blanched tomatoes in a bowl.

Heat the oil in a pan, add the onion and sauté for a few minutes. Add the garlic and cook until slightly golden brown. Add the dill and chilli, stir for 1 minute.
Now add the blanched tomatoes and add seasonings (black pepper and salt).  Stir and slightly crush the tomatoes, place the lid and bring to boil.

Using a hand blender, blend the tomatoes to a sauce like consistency. Reduce the heat, simmer for 5 minutes, stirring occasionally. Smiley
